The Jende JIGS for Knives can handle some pretty impressive blade sizes and shapes, including the Maestro Wu G-5 Large Fish Cleaver.
As the video above shows, the predominant leaf shape requires a little creativity when clamping it into the JIGS in order to present the edge as straight as possible when sharpening. We sharpened this G5 for a customer at 19 degrees per side using the Jende 120 Diamond Plate, 600, 1K, 3K, and 10K Naniwa Chosera Stones, and finished with a 0.5 micron Jende Nanocloth Strop loaded with 0.5 micron Jende Poly Diamond Emulsion.
The Maestro Wu G-5 Large Fish Cleaver is primarily used for cutting larger fish like Tuna, Mahi, Swordfish, and Salmon into steaks. This Chinese style cleaver’s weight and build allows the blade to chop into the meat and bone, and the curved leaf-shape blade then rolls through to finish the cut.
